Orange Honey Cake GF

2 1/2 cups White Rice Flour

1/2 cup Tapioca Starch

1 1/2 cups sugar

4 tsp Baking Powder

1 tsp Xanthium gum

1 tsp salt

2 cups Buttermilk or yogurt

2 tbls Orange Zest

1 cup vegetable oil

4 eggs

Spray 9″ x 13″ pan with cooking spray.

Mix all the dry ingredients together. Then mix in the buttermilk and orange zest. Next, whisk in the oil and eggs until everything is smooth. Pour batter into prepared pan and bake in a preheated 350* oven for about 30 minutes.

While the cake is baking, mix the juice of two oranges with 1/2 cup of honey. Allow the cake to cool until just warm. With a toothpick or skewer, poke holes all over the cake and drizzle the orange honey all over. You can also make an orange honey frosting by mixing powdered sugar into the drizzle mixture till its smooth.
